I've used JTAG and RS232 to flash 240x and 280x DSP. I believe RS485 can also be used as
it should work just like RS232. But can I download OUT or HEX files using CAN protocol? We are
using CAN for our system. So would be great if I can flash through CAN.

With eCan, you can just boot from, and then flash on-the-fly as you  can=20
do with SCI or SPI.
Is that what you speak about ?

if so, for DSP2812, there is a well described document named SPRU722=20
(maybe) where you can find informations.
There is another document with sample code for BootLoader and eCan boot.

I am considering adding this functionality to C2oooProg - what type of CAN
hardware on the PC side do you all recommend? These cards are typically
quite expensive and I wonder if there is a favorite out there.

here, we are using a Vector CANcardX (PCMCIA type II).

it is a dual CAN CANalyser with alayse (graph, statistics, export data, 
import data, simulate, test etc ...).
But maybe you only want a CAN interface, not a CAN analyser !
