You can read any standard book on speech and audio coding. The follwoing papers
will quite useful.

You can start with following papers on AAC. 

1) Karlheinz Brandenburg: "MP3 and AAC explained". Proc. of the AES

1999. 

2) M. Bosi, K. Brandenburg, S. Quackenbush, L. Fielder, K. Akagiri, H. Fuchs, M.

Then you can go through folowing paper on PNS:
