The output from the NTSC and PAL demos doesn't appear on the VGA
connector. Those demos generate output as composite video, which
VGA monitors don't accept. You'll need a composite monitor, or
something that accepts composite inputs like a PC video capture
card or a VCR. The signal appears on one of the phono sockets on
the edge of the card.
