Time Divison Multiplex a stereo signal on 6711?

I am inputting a stereo audio signal to the line-in of a C6711 DSK, how do
I multiplex both channels into a single signal? Would I have to quantise
them and then manually code it? Any advice would be appreciated.

I don't understand the question. Do you want to convert to a mono signal, or do you want to interleave the left and right channels in a single data stream so that they can later be separated? I assume that the DSK's audio input is stereo. If not, add the analog stereo channels before they get onto the board. Simply connecting them both to the input (with an appropriate series resistor for each if needed) should do that nicely.
