Hello,
I am a littele confused about the 21375 and the PWM-modul. On some
pages at analog.com it is mentioned that there are 4 PWM outputs, but
in def21375.h are no defines for the PWM control registers. Also the
datasheet does not mention PWM at all.
Are there PWM outputs built in the ADSP-21375 or not?

According to the data sheet
http://www.analog.com/static/imported-files/data_sheets/ADSP-21371_ADSP-21375.pdf
There are 16 PWM outputs.
They are muxed with the data bus, so you can not have both data and pwm
at the same time.
