Cylindrical Coordinates 2D Image

Hello All,
 
I want to  find the center of the image and defined one variable as theta which is fixed.

Draw a line passing thru the center of the 2 dimensional image at fixed angle theta and consider those pixels which lie on that particular line and display as a time series.

Please let me know if it is possible.
