I don't know about an assembler guide for the DSP56000, but I have some knowledge about a DSP56800 Assembler Guide which should be located in the Embedded DSP56800 CodeWarrior documentation part of the Embedded R5.1 CodeWarrior installation. I'm not at my home site, at present, but I think you will find a pdf file in the CodeWarrior Manuals folder for the assembler. I'm not sure about the actual name, though; it's the only assembler manual in the docs and it dates to about 2002, perhaps newer. I am maintaining an errata list for that particular Metrowerks pdf file, so ask away if you're interested and I'll email it to you or to anyone else, or I could attach it to a newsgroup response. If you are using CodeWarrior there is a option called View Registers that will let you see the registers.
